A new modern German bar and eatery is slated to open on Milwaukee’s East Side.
WürstBar, a venue which aims to blend both traditional and contemporary culinary offerings, is expected to open in the former Green Fields retail space at 1239 E. Brady St.
The new bar and restaurant will feature a menu showcasing modern Berlin street fare including döner kebabs and currywurst along with a menu of German specialties, including a wide variety of sausages made by Usinger’s. That will be accompanied by a beverage program which focuses on a combination of German brews, rotating drafts, wine and craft cocktails.
As for its look and feel, the restaurant aims to present a welcoming environment which marries both rustic and modern elements to create a space that captures elements of both the classic German brew haus along with a nod to modern day Berlin. In keeping with the theme, outdoor seating areas will capture a biergarten aesthetic incorporating elements like the must-have hammerschlagen, a nail game that’s a staple at German bars.
Behind the WürstBar concept are industry veterans Scott Schaefer, Andrew Fronek and Darryl Towers, operators of Milwaukee Brat House (Old World Third and Shorewood) and Jack’s American Pub on Brady Street.
"With the ongoing global COVID-19 pandemic, there is no set opening date at this time," the partners noted in a release on the new restaurant. "We will hammer down a more defined timeline as public health guidelines come into focus. As more details unfold for the best timing and strategy to allow the economy to get back on its feet safely, we will adjust our timeline in accordance."
"We are eager to be open, but we will be conscious of the health of our employees, the trades workers and the general public of Milwaukee, making safety our first and foremost goal. Milwaukee is a city field by hard-working people, strong communities and progressive industry. The city has supported our ventures with open arms and we look forward to continuing to provide another great dining option for our friends and neighbors."
